We are always on the look out for some new and interesting recipes, especially using vegetables.
Ingredients
1 large red onion cut into wedges
1 courgette cut into 2 cm slices
250 g mushroom
1 red pepper chopped roughly
1 yellow pepper chopped roughly
150 ml olive oil
1 garlic glove crushed
a spring of thyme
1 long roll of goats cheese cut into chunks
4 sheets filo pastry
sea salt and pepper
Method
Heat 100 ml of the oil into a large frying pan over a medium heat. Add the onion, and cook for 10 minutes. Add the peppers and cook for a further 10 minutes, keep stirring. Add the courgette, garlic and the mushrooms chopped. and again cook for another 10 minutes. Sprinkle with Thyme and season with salt and pepper.
Finally add the cheese, increase the heat and cook for 2 minutes. Transfer to a bowl, cover with cling film and pierce it in several places with a knife. set aside.
Preheat the oven to 180C.
Brush a loose based tin (18 x 20) some of the remaining oil.
Lightly brush a sheet of filo with oil and gently press it into the oiled tin; Repeat with the remaining 3 sheets. Trim off any excess overhang the edges. Fill with the vegetables and cheese mixture, fold over the edge inwards to form a rim. Bake for 25 minutes.
Place the tin on a wire rack and leave to rest.
