GRANNY WILTON’S CHRISTMAS CAKE

 

A moist, Rich and fruity, boozy Christmas cake. Packed with brandy infused fruit. It is a must for the Christmas Celebrations. Do not be put off by the list of ingredients, it is just a matter of mixing them all together.

INGREDIENTS

225g butter

225g soft brown sugar

225g plain flour

teaspoon nutmeg

teaspoon mixed spice

teaspoon salt

50g mixed peel

110g glacé cherries

50g ground almonds

2 tablespoon black treacle

4 eggs

350g currants

225g sultanas

110g raisins

 

METHOD

Prepare the dried fruit in a bowl, add 3 tablespoon of brandy, stir, and leave over night.

Pre heat oven to Gas1 130°C

Blend sugar and butter loosely, slowly add the beaten eggs. Now add all the remaining ingredients.

Line a 8 inch cake tin with baking parchment. Pour in the mixture.

Bake on bottom shelf for 1 hour. Lower the temperature to Gas half, 110°C bake for 2 to 2 half hours.

When cold drizzle with Brandy.

Wrap in foil, and keep in air tight tin.
