If you are an egg lover and want to try something new, then Mashed Potato Omelette can be the right choice for you. This scrumptious recipe is prepared with simple ingredients. The unique flavours of this recipe will definitely be a treat for your taste buds.
INGREDIENTS
300g Potatoes peeled and cut into same sized pieces
2 onions halved and sliced
4 tablespoons of olive oil
6 large eggs
Salt and Pepper
METHOD
Boil the potatoes for about 15 minutes until tender. Drain, and mash roughly.
Fry the onions in 2 tablespoons of the oil for about 15 minutes until soft, stirring often. Turn up the heat and stir constantly until golden. remove from the heat.
Beat the eggs. When the potatoes and onions are cool, add them to the eggs and mix well: Season to taste.
Pre heat the grill to very hot.
Wipe out the pan with kitchen paper, then heat the remaining oil. Pour in the egg mixture and cook over a medium low heat for 3-4 minutes until the bottom is set and lightly browned.
Place it under the grill until the top is dry and slightly spongy to the touch. The omelette should be creamy so be careful not to overcook: a little liquid inside is fine.
Serve warm.
You could serve it with a Tomato sauce.
We served it with an Herb Italian dressing:
Mix 2 tablespoons lemon juice, with 6 tablespoons of extra virgin olive oil,
add 1 teaspoon chopped orange zest, and 2 tablespoon chopped fresh tarragon, Salt and pepper.
