June 2nd 2022 The Queens Platinum Jubilee.
This simple tomato soup, is easy to prepare, but packed full of flavour. This was our starter for our Platinum Jubilee “Banquet”.
The addition of the tarragon adds a wonderfully Tangy, sweet, and spicy aroma to this fantastic soup.
Perfect you can serve it anyway: hot room temperature or chilled.
INGREDIENTS. Serves 6
30g butter
1 sweet onion, chopped
6 garlic cloves, minced
1 teaspoon red chili flakes
30g fresh tarragon leaves, chopped
2 – 400ml cans of diced canned tomatoes,
800ml Vegetable stock
120ml cream
salt and pepper to taste
METHOD
In a large soup pot on low heat, sauté the chopped onions with 30g of butter until soft and translucent.
Add the garlic, chili flakes, and the chopped tarragon. Sauté for 5 minutes.
Now add the tomatoes, cook on low heat for 10 minutes.
Add the stock and bring the soup to a boil on high heat. Turn down the heat and simmer for one hour covered.
With an stick blender, puree the soup until thin. Stir in the cream and leave until you are ready to serve.
Add salt and pepper to taste.
