INGREDIENTS. Makes about 600ml
6 tablespoons of extra virgin olive oil
20g garlic cloves crushed
2 x 400gr tins of plum tomatoes
A few basil leaves
1 teaspoon salt
black pepper
METHOD
Put the olive oil and garlic in a medium sized pan: as soon as the garlic starts to sizzle add the tomatoes. Simmer for 20 minutes until the sauce has reduced and thickened. Stir breaking up the tomatoes with a wooden spoon as they cook.
Add the Basil.
Season. The sauce is now ready. You can always freeze for later.
