FETA, BASIL AND STRAWBERRY CHEESECAKE CUPS

 

These mini no-bake cheesecake cups are super easy to whip up and assemble. They’re irresistibly creamy, rich and topped with fresh strawberries. No oven required.

This dessert is perfect for any occasion and is a definite crowd-pleaser.

INGREDIENTS Serves 4

50g unsalted butter
8 digestive biscuits crushed
150g Feta cheese
250g full fat cream cheese
100g sugar plus a tablespoon
150 ml double cream
15g basil leaves finely chopped with some held back for decoration.
400g strawberries
Squeeze of lemon juice

METHOD

Melt the butter, and add the crushed biscuits. Mix well until evenly distributed.

In a bowl crumble the Feta cheese, add the cream cheese. Beat together until as smooth as possible. Add the sugar and whisk it in. Now pour in the cream, and add the chopped basil. Whisk for a couple or so minutes until we’ll combined.

Blitz 100g of the strawberries with the tablespoon of sugar and the lemon juice, until liquidised. Finely dice the remaining strawberries, and mix them into the strawberry mixture.
