This easy Miso Meat Sauce is a tasty, savory-sweet side dish of ground meat seasoned with fermented soybean paste, mirin, and aromatics. Try it on steamed rice and noodles or in a lettuce wrap.
INGREDIENTS Serves 4
2.5 cm piece of ginger grated
2 spring onions chopped into small rounds
1 tablespoon toasted sesame oil
340 g ground pork
4 tablespoons miso
2 tablespoons sugar
For the Seasonings
45 ml mirin
45 ml sake
15 ml soy sauce
30 ml water
2 teaspoons cornflour
METHOD
In a bowl, combine the seasonings: Add 30 ml water and the cornflour. Mix it all together until everything is well combined.
Heat a frying pan over medium heat. When it’s hot, add the sesame oil and the chopped spring onion, coat the spring onions with the oil until fragrant.
Add the ground pork and break up the meat with a spatula. Add the ginger and cook the meat until it is no longer pink.
Add the miso and sugar. Combine well. Add the seasonings and cook on medium-low heat.
When the cooking liquid is reduced to your liking, turn off the heat. Transfer to a bowl or container. Serve hot along with steamed rice, noodles, or lettuce cups.
