Crispy on the outside, the flavours of green pepper, spring onions, sweet corn and cheese work so well together. This is one of those snacks that would make a great lunch , dinner, or as we did as a starter. Enjoy it in the Summer with a Salad or in Winter with soup.
INGREDIENTS Serves 4
100 g canned Sweetcorn drained
1 green pepper finely chopped
4 spring onions finely chopped
1 green chilli finely chopped
150 g Cheddar Cheese grated
2 tablespoons chilli garlic sauce
pinch of ground black pepper
8 slices of Bread ( you can use any bread you like)
Salted butter
Aged Balsamic Vinegar of Modena
METHOD
In a bowl mix together the sweet corn, the green pepper, spring onions, the green chilli, cheese, the garlic sauce and the black pepper. Mix well.
Butter one side of the 8 slices of bread. Place 4 slices, butter side up in Frying pan. Spread the mixture evenly over the 4 slices. Cover with the other slices butter side up.
Cook over a medium heat for 1 – 2 minutes on each side. Until crispy and golden.
Serve warm drizzled with aged Balsamic Vinegar of Modena (the syrupy one)
