Enjoy these delicious garlic Parmesan creamed potatoes. They’re made with roasted garlic for a delightful, delicious twist. They have a rich, buttery taste with a hint of sweet, and a smooth velvety texture, making each bite creamy and comforting.
INGREDIENTS Serves 6
2 medium garlic bulbs
3 tablespoons olive oil
1;2 kg potatoes
300ml full-fat milk
2 tablespoons butter
35 gr freshly grated Parmesan
fine sea salt and freshly ground black pepper
2 tablespoons chopped parsley or dill
METHOD
Preheat the oven to 160°C.
Peel the garlic bulbs cloves and place them in the small baking dish.
Pour the oil on top and toss the cloves into it. Roast them for about 20 minutes, tossing again half way through, or until the garlic cloves are lightly golden and very tender. Blend the garlic and the oil in a small processor.
Peel and cube the potatoes. Place them in the pan and cover them with cold water. Bring to a boil, add salt, cover the pan, leaving a gap, and cook the potatoes for about 15 – 20 minutes or until fork tender. Drain well.
Mash the potatoes.
Heat the milk in a small pan. Now add the milk, garlic, butter, and grated Parmesan to the potatoes. Mix to combine and add salt and freshly ground black pepper.
