A delicious and simple way of using all your surplus courgettes.
INGREDIENTS
1 kg Courgette
2 onions
For the pickling Liquid
400g white sugar
250ml white wine vinegar
1 tablespoon salt
2 teaspoon mustard seeds
1 teaspoon turmeric
1 teaspoon dried chilli flakes
METHOD
Place all the pickling ingredients in a large saucepan with a tight fitting lid.
Bring to the boil, and then simmer for 5 minuets.
Finely slice the courgettes and onions (I use a mandolin)
Turn the heat off under the pan and place the vegetables into the liquid and give a good stir, (don’t panic they will reduce down) and leave for at least 2 hours: Stir the vegetables again after 1 hour.
After two hours the vegetables will have reduced.
Turn the heat back on, and simmer for 5 more minuets.
Bottle….. easy peasy
Will the metallics on recycled jam jars be suitable or shall I use Kilmer jars with glass lids and rubber seals?
I always use ordinary Jam jars, with no problems, but feel free to use Kilner Jars: They do stylish
