Sheilas Mother apparently made really good potato cakes. Misshapen, and soft and gooey from all the butter. You can also roll them out thinly and fry like an oat cake.

Ingredients
450 gr mashed potato
110 gr plain flour
salt and pepper
oil fro frying
100 gr butter
Method
Lightly mix together the potato and flour and season generously. Flour your hands, and form the mixture into little cakes about 6 cm.
Heat the oil in a non stick pan, and fry until golden. Do not over crowd the pan, so cook them in batches.
Keep warm in a low oven add flecks of butter so they soak it all up.
The best results are achieved when the potatoes are hot and fluffy.
Serve on their own or with bacon. If you want to be “fancy” add a dollop of creme friche, but that never happened at 10 George Street;
