FATTOUSH SALAD

 

Sheila was in charge of dinner on Saturday, and surprisingly she chose salmon!  Citrus spiced Salmon

It was served with a classic salad Fattoush a middle eastern dish a mixture of peppers, spring onion, tomatoes, radish, lettuce and toasted pita bread croutons.

Healthy and zingy YUMMY!

Ingredients. Serves 6

2 large Pittas or any flatbread

400gr baby plum tomatoes roughly chopped

4 heads of little gem cut in half and roughly chopped

1 large cucumber halved lenghways and sliced into 1cm slices

1 red pepper cored, reseeded and cut into 2.5cm dice.

1 yellow pepper cored, reseeded and cut into 2.5cm dice

200g reddish cut into quarters

A bunch of spring onions thinly sliced

20 gr flat leaf parsley finely chopped

20g mint finely chopped

1 heaped tablespoon of sumac plus extra for garnish

Sea salt black pepper.

 

Method

Preheat the oven to 200C.

Line a baking sheet with parchment paper.

Cut the bread into 4 cm squares and lay them on the baking sheet. Toast them in the oven for 15 minutes until crunchy.

Put all the salad ingredients into a large bowl, sprinkle over the sumac, olive oil, lemon juice. Season to taste. Toss the salad.

Serve it on a large platter, poled high, topped with the croutons, and an extra sprinkling of sumac.
