Ingredients
1 peach (white or yellow) per person.
Marsala/Madeira or Amaretto
Light brown sugar
Amaretti biscuits (if not available I have used palmier or langue-de-chat)
Method
Cut the peaches in half & remove a little of the centre to create a slight hollow.
Crumble an amaretti into each hollow.
Pour over a teaspoon of Marsala.
Put a little brown sugar on top of each.
Bake in the oven at 180c for approx 30 minutes (ideally the top should be slightly caramalised).
Serve warm (not hot) or room temperature with:-
Mascarpone (slightly sweetened)/vanilla ice-cream/Chantilly
