SPAGHETTI CON SALSA CRUDA

 

Pasta with a sauce of uncooked tomatoes,and herbs is one of the delights of summer. This is so very easy to make. It is taken from one of our earliest recipe books. Marks and Spencer Italian cooking.

Ingredients. Serves 4

450g speghetti

450g tomatoes peeled

2 cloves of garlic thinly sliced

Salt and pepper

1 teaspoon sugar

Mixed herbs basil, parsley, dill, mint whatever takes your fancy, just leave a few out for garnish.

4 tablespoons olive oil

 

Method

Cook the spaghetti according to packet instructions.

Place the  remaining ingredients except the oil into a food processor, and blitz  till smooth. Add the oil a little at a time.

Once the pasta is cooked, drain and place in a deep serving bowl, add the sauce, mix well scatter a few basil leaves, and serve.
