TOMATO SALAD WITH THAI DRESSING

 

This easy and tasty dressing makes a refreshing change to the usual french style vinegarette.

Ingredients

serves 4

1 kg Tomatoes thickly sliced

6 – 8 mint leaves

Sea salt and black pepper

For the dressing

1 small red chilli

1 Garlic clove crushed

1 tablespoon Balsamic vinegar

2 teaspoons rice vinegar

2 teaspoons sesame oil,

1 teaspoon runny honey

Method

Cut the chilli in half deseed and chop very finely. Whisk together all the remaining ingredients for the dressing. Add the chilli by degrees to achieve the heat you like.

Arrange the tomatoes on a large serving plate. Season with salt and pepper. Drizzle over the dressing, and scatter the mint leaves

Serve at once
