TUNA PASTA

This tasty Tuna Pasta can be rustled up from tins and packets in the store cupboard. Quick and simple….and fairly healthy. I cooked it after we’d had friends round for an aperitif. They had left late, but I was able to prepare this is no time at all.

Ingredients serve 4

2 tablespoons of Olive oil
1 onion finely chopped
2  garlic cloves, crushed
400g can chopped tomatoes. I used a jar of the roast Tomato sauce Sheila makes
1 teaspoon chilli powder
1 teaspoon  sugar
500g pkt spaghetti
200g can tuna filets, drained (better tasting then using ordinary tinned Tuna)
handful of mint leaves

Method

Heat the oil in a pan, add the onion and cook for 10 minutes. Stir in the garlic, tomatoes, chilli and sugar. Season with salt and pepper and bring to the boil. Give it a good stir, then reduce the heat and simmer for 5 minutes.

Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions. Flake the tuna into the sauce and heat through.

Drain the pasta, return to the pan and stir in the sauce and mint leaves.

Serve with a generous grinding of pepper, and a sprinkle of parmesan if you’ve a mind.
