DEEP-FRIED CALAMARI WITH LEMON MAYONNAISE.

 

Fried calamari is a delicious seafood appetizer or snack made with deep fried squid that’s sliced into rings and coated with a flour mixture. Frying the calamari usually takes a couple of minutes. Dont be shy, if you cook it longer, it will become rubbery. Serve with a crisp glass of white wine.  We served them with ROASTED COURGETTE FRIES WITH PARMESAN

INGREDIENTS serves 4

For the calamari

400g Squid tubes

plain white flour to coat

salt and pepper to taste

sunflower oil for deep-frying

For the lemon mayonnaise

4 tbsp mayonnaise

½ a lemon, juiced

3 sprigs of dill, chopped

METHOD

Open up the squid tubes and slice into 2cm/¾in strips. Coat with flour and season.

Place in the fridge for 2 hours. By doing this you’ll find the flour will melt onto the squid creating a form of self-batter.

When fried it will be deliciously crisp. It is not a traditional method, but an excellent alternative.

Deep fry in hot oil until golden brown, drain on kitchen towel and serve with lemon mayonnaise.

Lemon mayonnaise, mix all ingredients together and serve with the calamari.
