CAJUN PRAWNS

 

INGREDIENTS. Serves 2

240g Raw King Prawns

2 teaspoons olive oil

40g Red onion

1 Garlic clove crushed

Pinch of sea salt

2 teaspoons lemon juice

1 tablespoon flat leaf parsley

Half teaspoon smoked Paprika

Half teaspoon cayenne

Half teaspoon dried oregano

Half teaspoon dried thyme

Half teaspoon chilli flakes

METHOD

 

Mix all the seasoning Ingredients in a small bowl.

Pat the prawns, then toss them in the spice mix.

Heat the oil in a frying pan. Add the onion and garlic and a pinch of salt. Cook gently for. About 5 or 6 minutes with a lid on.

Remove the lid and add the Prawns cook again for 5 minutes into they turn pink.  Add the lemon juice and sauté for 2 minutes.

Sprinkle with the parsley and serve with rice or if you prefer the healthy option cauliflower rice.

I used 200g of frozen cauliflower.Steamed it for a little while, before blitzing and I just used a non stick pan and didn’t add water (The steaming in effect cooked it)
