This is one that all pastry lovers simply have to try. With rich flavours that really pack a punch, the Black pudding, and apple puff pastry parcels are an absolutely delicious treat. Always a winner. A delicious starter incorporating apples and pork, perfect combination!
INGREDIENTS
2 Apples peeled and quartered
15g butter
Packet of Puff Pastry
1 Egg Beaten
2 Teaspoon Dijon mustard
2 Black Puddings cut into 4 pieces
METHOD
Preheat the oven to 220C°
Sauté the apple chunks on both sides in the butter for 4 minutes until coloured and just starting to soften. Drain on kitchen paper until cold.
Cut the pastry into 8 12 cm squares. Brush each piece with the egg. Divide the mustard between the squares.
Place a black pudding in the centre of each square, then place a piece of apple next to the sausage.
Brush the edges of the pastry with the beaten egg and close up the pastry around the filling, pressing tightly to seal into a parcel. Lightly brush the top of the pastry with beaten egg.
Chill for 30 minutes.
Bake the parcels for 15 minutes.
Serve hot with a frisee salad and a mustard dressing.
