CALVES LIVER WITH PARSLEY, SAGE, AND MUSHROOMS

This is so quick  and so easy, you really need to be ready it cooks in under 5 minutes. You wouldn’t have to put your wine glass down for long!

INGREDIENTS serves 2

350g thinly sliced calves liver
Plain flour for dusting
25g butter
1 teaspoon olive oil
100g mushrooms chopped
1 garlic clove crushed
1 teaspoon finely chopped sage
1 teaspoon chopped chives
1 teaspoon finely chopped parsley
Salt and black pepper

Method

Season the liver on both sides, then dust lightly with flour.

Heat a small knob of the butter and the oil in a large frying pan, until quite hot. Add the liver slices and sear quickly for 30 seconds on each side. Lift onto a plate, and set aside.

Add the rest of the butter to the pan, add the mushrooms, garlic, herbs and salt and pepper. Fry for 3 minutes, then return the liver to the pan and toss everything together.

Transfer the liver.mixture to serving plates, scatter over a little more parsley.

Serve with sautéed potatoes and a green sa
