This quick and simple Spanish Chorizo Tray Bake with Potatoes is super easy but big on flavour. Chorizo and smoky paprika make for a delicious meal. The best bit only one pan. I just put in the oven and voila, it’s ready an hour later.
INGREDIENTS Serves 4
300g Mini cooking Chorizo
400g chopped tomatoes
2 Potatoes, peeled and cut into 1.5cm dice
2 red onions Quartered, and sliced again
325g can of sweetcorn
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 heaped teaspoon pul biber chilli flakes
Salt and black Pepper
METHOD
Preheat oven to 200° C
Select a large roasting tin. Cut the chorizo sausage in half lengthways and add to the tin, along with all the other ingredients, and a generous amount of salt and pepper. Toss everything together.
Roast for one Hour.
Serve with some crusty bread, perfect for dipping into the sauce to soak up all the excess juices! but, it really it does not need any accompaniment.
