The trick to fuss-free fluffy coconut rice is to bake it rather than cook it on the stove. The coconut rice comes out perfectly fluffy every time, and no scorched pot!
INGREDIENTS
380g Jasmine rice
400 ml coconut milk
250 ml water
5 teaspoons cast sugar1
1 teaspoon salt
2 Kaffir lime leaves
METHOD
Rinse the rice a few times, then till a bowl with water, add the rice and leave to soak dot for 1 hour.
When ready drain and leave the rice for 5 minutes.
Preheat the oven to 180⁰C
Place the coconut milk, water, sausage and salt in a saucepan. Bring to the boil, then stir to dissolve the sugar.
Place the rice and Kaffir lime leaves in a oven proof dish. Pour in the hot coconut milk. And give it a quick stir. Cover the dish with a double layer of tin foil. Then bake in the oven for 40 minutes.
Remove the rice from the oven and leave to rest for 15 minutes with the foil on
Remove the foil and serve it into a bowl, and gently fluff up the rice. Serve
