PEA AND LETTUCE SOUP

 

 

This recipe was given to us by Sheila’s Sister-in-Law. It is so so easy, but tasty. Summer in a bowl.

Ingredients

1 head of lettuce cos or iceberg

1 onion

1 potato

150gr frozen peas

1litre of chicken stock

cream to taste

Method

Slice the onion. Chop the potato into a large dice, tear up the lettuce. Place everything into a large pan, add the peas and stock.  Cook until the potato is cooked. Wizz up and season;

Return to the heat and add cream to taste, warm, but do not let it boil.

Sorted!!  Serve with crusty bread
