PETITS POIS A LA FRANCAISE (Peas with lardons and onions)

 

This is a delicious recipe for peas done in the French style. Lovely and buttery. Peas brought to a new level.

INGREDIENTS. Serves 4

60 g butter
1 head of lettuce, washed and shredded
12 small  onions, peeled
2 slices streaky bacon, chopped
1 teaspoon flour
salt and freshly ground pepper
360 ml  salted water
1 pinch sugar
450 g  frozen peas
3 sprigs parsley

METHOD

Heat the butter in a saucepan. Add the chopped bacon and cook until it’s brown and crispy.  Add the shredded lettuce and the onions and cook for 2 minutes. Stir in the flour and seasoning. Add the salted water and sugar and bring the mixture to a boil.

Simmer for 15  minutes  then add the peas and cook for a further 10 minutes until peas and onions are tender. Most of the liquid should be absorbed and the consistency should be creamy. Check the seasoning and adjust if necessary by adding more salt and pepper.
