Juicy Prawns and a bright, garlicky herb sauce make a perfect match. Chimichurri sauce is similar to salsa Verde.
INGREDIENTS
for the Chimichurri Sauce
25 g flat leaf parsley finely chopped
5 coriander finely chopped
3-4 garlic cloves crushed
Quarter of a red onion
Half teaspoon oregano
1 teaspoon cummin
Half teaspoon chilli flakes
2 tablespoon of lemon juice
60 ml red wine vinegar
120 ml Olive oil
For the prawns
450g raw prawns
Half teaspoon salt
Half teaspoon black pepper
Half teaspoon cayenne pepper
1 teaspoon cummin
1 teaspoon paprika
1 teaspoon chilli flakes
1 tablespoon olive oil
METHOD serves 2
Mix all the ingredients for the Chimichurri Sauce, in a mixer except the red wine vinegar and the olive oil. Blitz
If you are eating straight away add the red wine vinegar and the olive oil. If not leave till the last minute
Dry the prawns, and butterfly them.
Place in a bowl and all the ingredients and
mix well.
Add the olive oil to a frying pan. Add the prawns and cook for one minute, the turn them over and fry for another minute. Check to see how they are cooking cook for another minute if necessary.
Serve on a platter, topped with the sauce. Serve with rice, pasta or Naan.
