PICKLED RED ONIONS

 

These onions are absolutely addictive , they are great on a cheese sandwich, on top of a chilli con carne, and especially good on tacos or enchiladas.

INGREDIENTS

2 medium sized ones sliced quite thinly

1 habanero chilli very finely chopped

Zest and juice of 2 limes.

Zest and juice of 1 orange.

Salt and pepper to season.

Small handful of coriander for garnish

METHOD

Put the thinly sliced onion in a heat proof bowl, cover with boiling water and set aside for 10 minutes. This process removes all of the bitterness from the onions and softens them.

Drain the onions giving them a good squeeze to get as much water out as possible.

Put them back in the bowl, add the chilli, the zest and juice of the limes and oranges and then season to taste with salt and pepper.

Leave to marinade for several hours.

Serve with a scattering of coriander.
