An easy Korean cucumber side dish that’s spicy, slightly sweet and tangy! It’ll be an excellent complement to any of your main dishes. Sheila served it with the BRAISED PORK WITH GINGER AND STAR ANISE
INGREDIENTS Serves 6
2 cucumbers
2 tablespoon soy sauce
4 tablespoons rice vinegar
2 tablespoon sugar
1 teaspoon red chili powder
1 tablespoon sesame seeds
2 teaspoon sesame oil
6 spring onions chopped
METHOD
Slice cucumbers into wafer thin slices.
Mix soy sauce, vinegar, sugar, and the chilli powder in a bowl, and Stir to help the sugar dissolve.
Add the sliced cucumber, along with spring onions and sesame oil
Sprinkle over the sesame seeds.
