A super easy mid week dish and a great one to make for friends. Cod smothered in a spicy harissa paste and pan fried. We Served it with STUFFED TOMATO DOLMAS.
INGREDIENTS Serves 2
Sunflower oil
2 chunky skinless cod fillets 150g
2 tablespoon honey
1 tablespoon rose harissa
zest of 1 orange and the juice of Half an orange
salt and Pepper
METHOD
Heat a frying pan, drizzle in a little sunflower oil. Season the cod fillets on both sides, place in the pan, and cook for 2-3 minutes on each side without moving them.
Mix the honey, Harrisa, the orange zest and the juice in a bowl then pour over the cod.The mixture should bubble and become thick and sticky. Use a spoon to baste the cod, with the mixture and as it thickens it will glaze the fish evenly;
Serve immediately.
