TOMATO DOLMAS A traditional Turkish dish – tomatoes stuffed with Balsamic rice. This easy recipe pairs ripe tomatoes with rice. Serve the stuffed tomatoes as a starter or double up for a main dish.
INGREDIENTS Serve 2
2 very large beef tomatoes
2 tablespoons Basmati rice
8 pitted green or black olives
2 teaspoons caper
1 teaspoon dried oregano
Handful of chopped flat leaf parsley
2 spring onions thinly sliced
I tablespoon tomato puree
1 teaspoon garlic granules
Salt and Pepper
METHOD
Preheat oven to 220°C
Cut the top of each tomato retaining it as a lid. Use a teaspoon carefully scoop out the insides. Pour the juice into a bowl, then finally chop the flesh, and add to the bowl
Add all the other ingredients to the bowl, and combine well.
Sit the tomatoes in a ovenproof dish, and divide the rice mixture between them. Cover with their lids and bake for 30 minutes
Remove from the oven, and cover the dish with foil, and bake for a further 45 minutes.
