Sweet, sharp an spicy. This is easy to make. and goes with most things.
INGREDIENTS Makes about 800G
800g Tomatoes roughly chopped
60g Fresh ginger finely chopped
3-4 garlic cloves finely chopped
2-3 Green chillies finely chopped
125ml Rice Vinegar
300g granulated sugar
METHOD
Blitz the tomatoes in a mixer. Add all the other ingredients except the sugar and blend well.
Pour the mixture into a saucepan and add the sugar. Bring to a gentle simmer and cook over a low heat until reduced to a thick “Jam” like consistency.
Pour into warm sterilised jars. Store in a cool dark place.
