A simple tomato tart, another way to use up all those gorgeous tomatoes. I just thought “a tart” (as you do) and started to throw a few ideas around, and voila a very tasty even if i do say so myself. Th addition of the courgette was my second version, I thought it was better, but Sheila liked the extra cheese the first time.
Ingredients
1 packet of ready rolled puff pastry
4 large tomatoes any variety and colours
1 medium courgette (optional)
2- 3 tablespoons of cream cheese such as Philadelphia. If you are not using the courgette add more cheese.
1 tablespoon of olive oil
Grated Parmesan cheese
dried oregano

Method
Preheat oven to 180′
Roughly chop the tomatoes, and thinly slice the courgette.
Lay the pastry onto a pizza tray preferable one with holes in. Spread the cheese over the pastry. place the courgette on top, followed by the tomatoes.
Sprinkle over the oregano and the Parmesan.
Drizzle over the olive oil.
Bake for 30 minutes
Serve at room temperature with a green salad
