These stuffed peppers are so simple to make, amazingly flavourful and perfect for a quick healthy weeknight meal. The tuna mixture has a richness to it from the black eyed peas and the tomatoes but it’s still super healthy.
INGREDIENTS Serves 2
1 200g can of Tuna drained
2 large peppers
1 red onion finely chopped
1 400g can of Black eyed peas drained
half a 400 gr can of chopped tomatoes
A handful of finely chopped Parsley
Olive oil for coating the peppers
METHOD
Pre heat Oven to 180° C
Cut the tops off the red peppers but keep for lids later. Remove the seeds. Rub the Peppers in olive oil.
In a bowl add the chopped red onion, the black eyed peas, tuna, the chopped tomatoes, and the parsley.
Mix everything well, and stuff this mixture into the Peppers. Top with lids.
Bake for about 45 minutes.
