INGREDIENTS
250 g white kidney beans, soaked overnight
3 tablespoons tomato paste
1 tablespoon Tabasco
3 cloves garlic, crushed
3 medium onions, chopped
1 red pepper finely chopped
1 tablespoon lemon juice
1 teaspoon ground cumin
2 tablespoons olive oil
salt and pepper to taste
450 ml beef stock
METHOD
Combine soaked beans, tomato paste, Tabasco sauce, garlic, onions, red pepper lemon juice, cumin, olive oil, salt, and pepper in a pan. Mix together until beans are coated. Pour in beef stock and top off with enough water to completely cover bean mixture.
Simmer over medium heat until thickened, about 2 hours.
Serve with rice, crusty bread, or naan.
