YAKITORI. Chicken skewers 焼き鳥

 

These chicken skewers are a classic food served in Japanese-tapas style pubs.

Glazed in a savory-sweet sauce, these Japanese chicken and green pepper skewers are hard to resist

Ingredients  Serves 8 as an aperitif

8 Chicken thighs without bone if possible.

8 tablespoons Japanese soy sauce

4 tablespoons sake

3 tablespoons sugar.

sesame seeds

 

Method

If you are using wooden skewers soak in water for an hour.

Cut the chicken into 2 .5  cm chunks.

Thread the chicken onto the skewers.  Don’t over load the skewers about 7.5 cm is sufficient. Cover with cling film and refrigerate till needed.

Combine the soy sauce, sake, sugar in a small Pan and bring to the boil. Lower the heat stir till the sugar as dissolved.

Pre heat the grill. Try to position the skewers 10cm away from the heat. Grill for 4 minutes on each side till the chicken is three quarters cooked. Brush with the sauce, and grill briefly on both sides. Brush again with the sauce and grill again for about another 30-40 seconds. scatter the sesame seeds.
